Butter Chicken

1 kg Tomatoes
1 small Onion, sliced
3 cloves Garlic, crushed
500 gm Chicken fillet, diced
Spice Trail Butter Chicken Spice
Salt to taste
Butter for sealing chicken
100 ml Pure Cream

In a pot, put together quartered tomatoes, onion, garlic and 1 tsp Spice Trail Butter Chicken Spice. Simmer for at least an hour, strain sauce and set aside.

Marinate chicken in 2 tblsp of Spice Trail Butter Chicken Spice and salt to taste. In a hot pan, melt some butter and quickly fry the chicken, for 3-4 minutes on either side, then add it to the sauce and simmer until the chicken is tender. Pour in 100ml of cream or to taste and simmer further until the sauce thickens. Serve with steamed rice or naan.
